Batch #72 - Wheaty Dark Ale (!)

Started batch on Sept 19, 2011:

Recipe:

  • 6.0 lb Dark Malt Extract (Northern Brewer)
  • 1.5 lb Briess Wheat (dry)
  • 1.0 oz hop pellets (Perle, 8.7% alpha) 60 min
  • 1.0 oz hop pellets - finishing (Sazz, 3.7% alpha) 20 min
  • 1 tbs Irish Moss, last 15 min
  • 1.0 oz hop pellets - aroma (Sazz, 3.7% alpha) less then 3 min
  • Safeale S-04 (dry ale type)
  • Specific gravity 1,0XX

Procedure:

Sanitized everything with Star San. Boiled wort for 60 minutes and then cooled down with cooper coil cooler. Pitched yeast at 25C. Covered plastic bucket with the tight cover and the airlock filled with Chopin vodka. Kept in basement temperature (~70F)

Progress log:

  • Sept 20, 2011: Fermentation visible in the morning, very strong, every 3-4 times/sec, in the evening. Needs cleanning.
  • Sept 21, 2011: Fermentation still very strong, every 3-4 times/sec. TBD.:Cleaned and replaced airlock.
  • Sep 25, 2011: Racked to secondary.

Evaluation:

  • Oct 25, 2011 - very good delicate taste. Less hoppy than #71. Great head.
  • Nov 07, 2011: To be repeated.
